Fried rice with shrimp, green pepper, onions, and a jalapeno
One of my favourites when i eat out, this was actually my first time trying to make it, usually i make my fried rice bare with egg and chopped scallions. I like to cook/prepare my ingredients separately and then combine them in the end. With fried rice usually you want the rice to go in last or else it’ll gum up your wok and burn. I scrambled the egg first. Then i separately sauteed the shrimp with the onions. After the onions i sauteed the green bell pepper, put in the egg and onions and shrimp. Stir fry with soy sauce, waited till everything is decently cooked, and added a bowl of pre-steamed rice (yesterdays leftovers). At this point i added the jalapenos to give it some kick, and half a table spoon of salt. Garlic optional, chopped scallions optional to help give it more kick.

This is a common Chinese home dish, if you are in Beijing you would see this every where and most hole in the wall family restaurants would serve it.
To make it is pretty simple. Scramble some eggs, put in a bowl, use the left over grease to fry the onions, make sure they turn slightly golden, and add chopped tomatoes. At this point i would add some soy sauce to make it fry easier. Add the scrambled eggs and stir fry, when it starts to turn slightly mushy, i usually add half a table spoon of salt and equal amount of sugar. Put it in a bowl and sprinkle some scallions on top. I like to eat it with something spicy on the side, and a bowl of rice.
